Lemon Posset is not only delicious, it involves a little bit of magic too. It’s hard to believe you can create such a luscious and show-stopping dessert with only three simple ingredients.
Yes, with just some heavy cream, a little sugar, some fresh lemons (and a little culinary science) you create a mousse-like treat that’ll make your guests wonder if they accidentally stumbled into a 5-star restaurant! While creamy and rich, the sharp lemon flavour means you’ll never want to stop eating it.
Perfect for a special occasion, since you can make it ahead of time, and you won’t believe how easy it is! No baking, no fuss. All you need is a pan and your ingredients. Trick your friends into thinking you’re a gourmet genius by whipping up this simple lemony treat today!
What you need for this recipe
A medium saucepan
A wooden spoon / spatula
A fine grater
Cocktail glasses or ramekins (to serve)
You will also need a variety of plates, small bowls, and cutlery on hand for this recipe to weigh ingredients into, portion spices, etc.

Ingredients (makes 4–6 servings)
600ml Heavy (whipping) cream
150g Caster sugar
2 medium lemons (as fresh as possible)
Grated chocolate (for decoration)

Method
Add cream and sugar to a saucepan and stir them together using a wooden spoon.
Cook on a low heat until the sugar is dissolved. Bring the mixture to a bare simmer but do not allow it to boil (as this will scorch the cream and ruin the flavour)
Remove pan from heat and allow it to cool down for a few minutes
While the cream is still warm, finely grate in the zest of two lemons (making sure to use only the yellow skin, avoiding the white pith as this tastes bitter).
Add in the juice of 2 whole lemons, making sure to strain out any seeds, and stir the mixture. (Here’s where the magic happens. When the citric acid from the lemons interacts with milk proteins it causes the mixture to thicken and become custard-like!)
Before the posset sets, pour it into your serving glasses and put them into the fridge to set.
Give the possets 1-2 hours to chill in the fridge (although it’s best if left overnight)
Once chilled, sprinkle over grated chocolate (or a decoration of your choosing) and serve.
Final comments
Trust the process, when you first make these you’ll think the mixture is too runny and might think you’ve done it wrong.
However, give the possets time to chill in the fridge and a few hours late you’ll see there’s been a magical transformation, from simple cream to a luscious lemon dessert.
